With Winter hitting most of my mates pretty damn hard (cue relationship, depressed, flu and emo driven Facebook statuses) I headed to Twitter in much the same fashion. Woke up feeling like shit on Monday morning with a sore neck, lower back, aching stomach and a killer migraine. So naturally, I felt like some heart warming, homemade chicken soup! After asking some foodies on Twitter, most of them said I should go for the broth based chicken soup, as the creamy one like you get from Woolies may worsen the stomach ache… ENJOY!
Homemade Chicken Soup Recipe
The Broth:
1 x whole chicken – (1.2kg to 1.6kg)
3 x large celery stalks (celery bulbs work too)
2 x large leek stalks
4 x large carrots
2 x large onions
1 x bay leaf
1/2 x garlic
2 x juniper berries (not a must, but adds a nice flavour)
Salt and pepper to task.
Methods:
Chop the vegetables roughly as they are just there for the flavor. Make sure if you are using frozen chicken to defrost it first.
Add all the ingredients into a large pot and add water till your chicken is pretty much just covered (the bastard will float a bit)
Simmer for about 2 hours on low to medium heat or until the meat pretty much falls off the bone, don’t let it boil, boiling can ruin any good stock.
After about 2 hours take the chicken out as you want the meat. Set aside to cool off for a bit.
Strain off the soup and discard the vegetables. (you can cheat a bit and add a vegetable or chicken stock cube to enhance the flavor, but I go all natural)
The Actual Tasty Soup:
Your Broth
The scavenged meat from your chicken (the size of the pieces are up to you)
1 x cup of broccoli
1 x cup of peas
1 x cup of sliced carrots
1 x cup of rice (I prefer to use diced penne tubes)
1 x cup of green beans
Pre boil the rice/pasta until it is Al dente, it will fully cook in the broth. Pre boil the vegetables (At home I use frozen vegetables because it is easier to store)
Combine everything in your broth and let it cook till the rice is soft. Season to taste.
The list of vegetables is all up to you, you can add whatever ones you want.
Add some Parmigiano right at the end.
