I have included three of my best food, and three of my best cocktail recipes made with the Original Sedgwick’s for you below! Have a look see what tickles your fancy, give them a bash at home and make sure to tell me which is your best combo for the competition you’ll find below! SEDGWICK’S SWEET STACK!
What You’ll Need:
2 eggs
300 g Cake flour
30 ml (2 tbsp) Castor Sugar
1 x 10 g sachet active dry yeast
a pinch of salt
375 ml (1 ½ cups) Full Cream Milk
170 g Butter, melted
Method:
Place the flour, castor sugar, salt and yeast in a large bowl or the bowl of an electric mixer fitted with the paddle attachment.
Combine the milk, butter and eggs and whisk together.
Add the wet ingredients to the dry ingredients and mix until combined. Place in a warm place to prove until doubled in size.
Heat a small knob of butter in a non-stick pan and ladle 125ml of the batter into the pan and fry until golden turning halfway.
SEDGWINGS!
What You’ll Need:
180ml Sedgwick’s
5ml crushed garlic
5ml ginger
125ml soya sauce
125ml apricot jam
30ml honey
5ml sesame oil
5ml Chinese five spice (optional)
8-10 chicken wings
Method:
Combine all the ingredients except the chicken wings in a medium glass bowl. Add the chicken wings and leave to marinate for 10 minutes.
Preheat the oven to 180°C. Line a baking tray with baking paper. Shake excess marinade off, reserve the marinade. Place the wings on the baking tray. Bake for 40 to 50 minutes until golden brown and sticky, baste two times in between with the marinade.
THE BIG BEN BURGER!
What You’ll Need:
750g beef mince
200g chorizo sausages, finely chopped
10ml smoked paprika
5ml salt and freshly ground black pepper
60ml olive oil
60g butter
5 onions, thickly sliced
2.5ml brown sugar
80ml Sedgwick’s
60ml brown sugar
250g streaky bacon
Method:
Combine the beef mince, chorizo and smoked paprika. Season with salt and freshly ground black pepper. Set aside in the fridge for 30 minutes.
In the meantime; heat the butter in a large frying pan over medium-low heat. Add the onions and fry until it starts to caramelize. Season with salt and freshly ground black pepper. Add the brown sugar and caramelize for another 5 minutes.
Add the Sedgwick’s and reduce until sticky. Set aside.
For the bacon; preheat the oven to 180°C. Soak the bacon in the Sedgwick’s for 30 minutes. Line the bacon on a baking tray. Sprinkle with brown sugar and bake in the oven for 10 minutes. Turn around and bake for another 5-10 minutes or until caramelized and crispy.
Heat a griddle over medium high heat. Shape the mince mixture into tennis size balls. Rub with the olive oil and griddle for 8 minutes on each side or until done until your liking.
Serve the patties on toasted Brioche buns with the caramelized bacon and caramelized onions.
THE CHARLES SHANDY!
What You’ll Need:
300 ml Sedgwick’s Old Brown
1 cup ice cubes
3 oranges, squeezed/180 ml orange juice
300 ml cranberry juice Bitters
Crushed ice (enough to fill a ¼ of a jug)
18 ml grenadine
3–6 strawberries, sliced
2 – 3 orange peels
Method:
In a cocktail shaker, add ice cubes, Sedgwick’s Old Brown, orange juice, cranberry juice and 12 dashes of bitters. Shake well. Strain into a jug over crushed ice and top with grenadine. Garnish with strawberry slices and orange peels.
UNDINES HERO!
What You’ll Need:
300 ml Sedgwick’s Old Brown
Ginger beer (to top it up)
18 sugar cubes
3 lemons, squeezed/90 ml lemon juice
Crushed ice (enough to fill ¼ of a jug)
3–5 lemon slices
2–3 lemon rinds
Fresh mint
Method:
In a cocktail shaker add sugar cubes, lemon juice and Sedgwick’s Old Brown. Shake well. Strain into a jug over crushed ice and top with ginger beer. Garnish with lemon slices, rinds and mint.
SEDWICK’S LANE!
What You’ll Need:
300 ml Sedgwick’s Old Brown
Sparkling water (to top it up)
1 cup ice cubes for shaker
Ice cubes to fill ¼ of a jug (+/- 18 cubes)
2 tbsp. castor sugar
2 punnets raspberries
300 ml cranberry juice
Fresh basil
Method:
In a cocktail shaker, add 1 cup ice cubes, castor sugar and 2 handfuls of raspberries. Muddle and pour in Sedgwick’s Old Brown and cranberry juice. Shake well. Strain into a jug over remaining ice cubes and top with sparkling water. Garnish with raspberries and basil.
